Lathe mounting?

I'm new to turning and don't fully understand the gadget. What are the different ways to mount the wood on the machine? The only method I've explored is using the faceplate. What other ways are there, and are all (or most) of these methods available on most lathes?

There are chucks available contained by two jaw, three jaw & 4 chin. Also long pieces can be held between centers.
